Buttermilk Kuzhambu or Morkuzhambu is a commonly prepared south indian liquid curry which is served with white rice. It tastes great with potato and brinjal fries.
Combination of buttermilk, coconut and spices gives heavenly taste. Tradationally we use vegetables like okra, ash gourd or brinjal to prepare this curry. But here instead of vegetables, I am using Murangai Keerai (drumstick leaves). It just not increases the nutritional value, but also the taste and the flavour.

Murangai Keerai Morkuzhambu / Drumstick Leaves Morkuzhambu
INGREDIENTS

Coconut grated- 1/2 cup | Drumstick Leaves- 2 cup |
Fried Gram- 3 tsp | Curd- 1/2 cup (or) Buttermilk- 1 cup |
Coriander seed- 2 tsp | Salt- 1 1/2 to 2 tsp |
Cummin seed- 1 tsp | Coconut oil- 4 tsp |
Pepper- 3/4 tsp | Mustard- 1/2 tsp |
Turmeric powder- 1/4 tsp | Cummin- 1/2 tsp |
Asafoetida- 1/2 tsp | Red Chilli- 1no. |
Red Chilli- 2 nos. | Few Curry Leaves |
Green Chilli- 1 no. | |
Small Onion- 5 nos. | |
Garlic- 4 pods | |

INSTRUCTIONS
For Paste
1. In a mixer jar, take 1/2 cup coconut, 3 tsp fried gram, 2 tsp coriander seed, 1 tsp cumin seed, 3/4 tsp pepper, 1/2 tsp asafoetida, 1/4 tsp turmeric powder, 1 green chilli and 2 red chilli.
2. Make them into fine paste.
3. Finally add garlic pods 4 nos and small onion 5 nos, few curry leaves and grind it for few seconds.
4. Then add curd and whip it for a second and keep the paste aside.
For cooking
1. Keep the pan and pour 1 cup water.
2. Then, add thoroughly rinsed drumstick leaves.
3. Cook till it becomes soft, approximately it takes 10 min.
4. Once it is done perfectly add the prepared masala and mix well.
5. Rinse the jar with 1 cup water and add.
6. Add required salt (1 1/2 - 2 tsp) and water to adjust the consistency.
7. Consistency should be thin as it is a liquid curry.
8. Cook it in a low medium flame.
9. Switch off the flame once it starts boiling. Do not allow it to overcook, as it will change the taste.
10. Keep the pan, add coconut oil and seasoning it with 1/2 tsp mustard, 1/2 tsp Cumin seed, 1 red chilli and few curry leaves.
11. Add it to the curry.
12. Ready to serve!

Note :
1. Usually, we use soaked toor dhal for this curry. But here I'm using fried gram for quick completion, taste will remain same.
2. Here I'm using curd, instead you can also use buttermilk.
3. You may skip onion and garlic if you want.
4. You can use any oil, but it tastes better with coconut oil.
5. Immediately switch off the flame when the curry starts to boil, don't overcook.
6. Choices of vegetables- Okra(Vendakkai), Ashgourd(Vellai pusani), Brinjal(Kathirikkai) etc.
