Tomato rice is a famous South Indian delicacy and a good lunch box recipe.
Tomato rice is indeed a good dish, where you prepare it without using much of vegetables. It gives you a rich taste with less efforts. In simple words, Poor Man's Biryani. Tomato rice goes well with potato chips, raitha, vathal and vadagam. You can cook it in different method, and the one I have used here is one pot meal method. Every one loves this, especially for its tangy flavour.

Tomato Rice
INGREDIENTS
Rice 1 Cup |
Tomato 3 Nos (big) |
Coconut milk 1 Cup (optional, else 1 Cup water) |
Onion 2 Nos |
Sambar powder 2 tsp or (Chilli powder 1 tsp, Coriander powder 1 tsp & Cummin powder 1/2 tsp) |
Ginger 2 Inch piece |
Garlic 6 pods |
Green Chilli 1 |
Salt - as required (1 1/2 tsp) |
Turmeric 1/2 tsp |
Bay leaf 1 |
Cinnamon 1 |
Cloves 2 |
Star Anise 1 |
Marati mokku 1 |
Fennel seeds 1/2 tsp |
Mustard, Urad dhal, Channa dhal - small amount |
Red Chilli 1 |
Chopped mint & Coriander leaves 1/4 cup |
Curry leaves - Few |

INSTRUCTIONS
1. Wash and soak the rice for 15 min.
2. Keep the pressure pan and heat, add 1 tsp ghee and 4 tsp oil.
3. Then add Bay leaf, Star Anise, Cloves, Cinnamon, Marati mokku, Fennel seeds one by one and saute till it turns aromatic.
4. Then add sliced onion and green chilli, saute till the onion turns translucent.
5. Now add Ginger and Garlic paste, cook till it raw smell goes away.
6. Then add chopped Coriander and Mint leaves. saute it for a while.
7. Add the chopped tomatoes, Salt, Turmeric powder and saute till the oil gets separated.
8. Add sambar powder, garam masala. Mix well and cook for a minute.
9. Now add the soaked rice. Mix well for 2 min.
10. Then add 1 cup Coconut milk, two cup water and salt. Mix well and allow it to boil.
11. Then cover and cook for 15 min in low flame or 1 whistle in the medium to high flame.
12. Finally in a separate pan, add oil and seasoning it with Mustard, Urad & Channa Dhal, Red chilli, Curry leaves. Garnish with Coriander leaves and serve hot.

10. Then add 1 cup Coconut milk, two cup water and salt. Mix well and allow it to boil.
11. Then cover and cook for 15 min in low flame or 1 whistle in the medium to high flame.
12. Finally in a separate pan add oil and seasoning it with mustard, Urad & Channa Dhal, Red chilli, Curry leaves. Garnish with Coriander leaves and serve hot.
Note
Adjust spices level according to your taste.
You can use all type of rice like raw rice, boiled rice, seeraga samba and also basmathi rice (here I used raw rice).
You can cook in low flame for 15 mins, as I have done or with one to two whistle in high flame (which varies according to your pressure cooker).
Using coconut milk, gives you rich taste. But, while in a hurry or in lack of time, we can use 1 Cup water instead.
