It is a popular continental dish. Every region has its own version. Presenting you my version of the recipe.

Stuffed Capsicum
INGREDIENTS
Capsicum 8 Nos |
Onion 2 Nos |
Tomato 2 Nos |
Boiled Potato 4 to 5 Nos |
Steamed Veggies (Carrot & Beans) 1 cup |
Ginger - 2 inch piece |
Garlic 6 Pod |
Green Chilli 1 No |
Turmeric powder 1/4 tsp |
Sambar powder 2 tsp. Here I used sambar powder. Instead you can use Corriander powder 1 tsp, Chilli powder 1 tsp & Cummin powder 1/2 tsp) |
Few Chopped Corriander |
Grated Cheese 1/2 cup |
Butter 1 tbsp |
Salt as required |
INSTRUCTIONS
1. Wash well and pat dry, remove stem and seeds of the Capsicum.
2. Keep the Pan and heat, add one tbsp butter.
3. Add Chopped onion and saute until it becomes translucent.
4. Add pounded Ginger & Garlic paste and saute until the raw smell goes.
5. Add the chopped tomatoes and cook till it becomes soft.
6. Add salt and Turmeric powder and saute well.
7. Add sambar powder or (Coriander + Chilli + Cumin powder).
8. Add Garam Masala and saute well for a minute.
9. Add boiled potatoes, Veggies and Green Chilli one by one.
10. Mix well and mash it thoroughly.
11. Adjust salt and garnish with Coriander leaves.
For Cheesy Capsicum
1. Take one fourth of the prepared masala separately
2. Add half portion of the cheese to it and mix well.
3. Take 4 Capsicum and stuff with this masala.
4. Finally garnish with remaining Cheese. Bake it at 180 deg C for 20 to 30 min (Once it is completely cooked).
5. Ready to serve.
For Gravy
1. Take the remaining Capsicum and stuff with masala.
2. Keep it in pan containing the remaining masala.
3. Add 1 cup water to adjust the consistency and mix well.
4. Cover and cook till the Capsicum becomes soft & tender.
5. Ready to serve.

Note
For stuffing, it will be nice to get small size Capsicum, if it is not available cut the bigger one into halves and stuff them.
For both the dishes cook the Capsicum well until they become soft.

Capsicum is a good source of Vitamin A, C and dietary fibre. It will help to burn fat and lose weight. It lowers risk of cancer as it contains antioxidant and anti Inflammatory nutrients.
Potato and other veggies are good source of vitamins and minerals and also excellent source of dietary fibre.
