Akkaravadisal, an authentic popular Neivedhyam.

Akkravadaisal
INGREDIENTS
Rice 1/2 cup |
Moong Dhal 3 tsp |
Jaggery 1 cup |
Milk 2 cup |
Ghee 3 tbsp |
Cardamom 1/4 tsp |
Cashew Nut 10 Nos |
Raisins 10 Nos |
Pachai karpooram 1 pinch (Optional) |
Salt a Pinch |
Water as required |
INSTRUCTIONS
1. Wash rice and dhal together and soak for 15 mins.
2. Prepare a syrup with Jaggery, water and ghee 1 tsp (ghee gives lustrous effect).
3. Keep the pressure pan, add 1 tsp ghee and then add the soaked moong dhal and rice. Fry it for a minute.
4. Add half cup water, one and half cup milk and a pinch of salt. Allow it to boil and pressure cook it. Leave two whistles.
5. Once done mash rice and Dhal well and then add the remaining half cup milk and mix well.
6. Now add the Jaggery syrup and mix well.
7. Cover and cook it in a low flame for 10 minutes.
8. Then add the roasted cashew and raisins, cardamom and Pachai karpooram (optional).
9. Finally add 2 tbsp ghee and mix well. Keep in the low flame for couple of mins.
10. Delicious akkaravadisal is ready. Garnish with some nuts and serve.

Note:
Milk should be rich and creamy.
Taste good with even more ghee.
Pachai Karpooram is optional.
If we want the sweet to be mild, 3/4 cups of Jaggery is enough.
If you use a bronze vessel, then cover and cook in a low flame, till it gets ready.
Health benefits:
Since it is a richer version of pongal, it is highly nutritious and good for health.
Combination of rice and moong dhal is packed with proteins, vitamins, minerals and amino acids.
Jaggery is a good source for iron - key nutrient for making up your haemoglobin count.
It is better to have jaggery occasionally as an option to refined sugar.
